I think it's a great idea. Wish I could be of some help at this stage, but I don't know the first thing about setting up a Wiki.

Wiki != Wiki. Does ist have to be Mediawiki (like Wikipedia) or is another wiki system also possible? Which features are essentially required? Which kind of webspace (PHP, MySQL, Postgresql, Shell) you can afford?
Do you have Linux/BSD/Unix skills? That would help a lot.
